GM organic AP Flour

GM organic AP Flour

I found Gold Medal organic AP flour in the store today...does anyone know what is the protein % ?  I have never tried it as compared to say KA AP and KA AP organic.  I like GM special Bread flour very much.

Sylvia, I went to the GM site, but there's not much hard info on the Home Baker's side. There is much more info on the Professional Baker's side.  Sperry is GM's organic line. My guess is that GM is packaging Sperry AP Organic flour as GM AP Organic for the home baker. The protein content is 12%.

I buy my flour in 50-lb bags at the Lakeside Poultry Ranch. Their staff is very friendly and willing to help you find the flour you want.

Thank you, I would be like a kid in a candy store...never knew they existed...thanks again for the information.  We moved to San Diego a few years ago to be near my daughter's family...seems like they have everything here!  After living in the desert most of our life it's a real thrill to be able to get just about anything you want fresh any time of year...we love it here...San Pasqual area right by Wild Animal Park is our home.

Here in Florida we don't have a great selection of flours from which to choose.  However, about 6 months ago our local Walmart began stocking 5 lb. bags of Gold Medal organic unbleached flour. A few months back I purchased 3 five pound bags and got excellent results with it.  It even does very well when used for bagels.  It's been used up so I can't check the bag for protein content or I would do it and let you know.   

However, it is expensive compared to King Arthur flour.  Here in N. Florida, at Walmart, it cost approx. 4.50 per 5 lb bag, compared with $3.89 per 5 lb. bag for King Arthur.

Recently I mail ordered 25 lb. bags of white and light rye flours direct from Bob's Red Mill as a test. I'm really happy with Bob's Red Mill flours and it was the cheapest way to buy it.  I think I'll order it in 50 lb. bags in the future.  Since you live in San Diego Susan's suggestion sounds like a good one.

I'm really just starting to compare different flours.  I have been using only KA for a number of years...it was always available and I had excellent results plus I could pick it up at my local grocery....very reasonable at some...I have ordered some rye and organic wheat from KA site and Bob's RM at local grocer...glad to hear you like his brand as I have a new bag also....  Then GM artisan harvest king 'green bag' started being stocked at my grocer...I tried it and loved it...but now I don't notice it in the "green bag" any more...just the "yellow bag" stating the same qualities, ingredients, excellent for bread ect...Do you know if this is the same as the Green labled bag of GM and they have just changed the bag coloring for their bread flour?  The reason I ask is because so far I have gotten the best results making my pizza dough from the GM harvest king Bread ... better than the KA...I don't know why but it just is when I'm using bread instead of AP for my pizza dough...I like pizza dough texture better with bread flour...AP and 00 Caputo is excellent and I have used both...It's just a personal perferance.  The GM organic AP...says 3% protein on the back of the bag as compared to 4% on KA...I'm not sure how that affects the gluten as compared to the unlisted protein content!!  Last time I looked in Walmart here they did not have the 'organic' GM.  I don't know if they were just out that day...I was in to much of hurry and it was so busy to ask a clerk to check!
