Roasted Onion with Asiago Miche from BBA

One another thread, they are talking about your first bread book. The BBA as we call it was my first purchased bread book. It was a great introduction to bread making and I progressed with every new loaf. As I read along here I became distracted with other bread types and haven't been browsing as much recently. The other day I was comparing notes on bagels and since I use Reinhart's water bagel formula and method as my go to, best ever method, I had the book open. As I turned the pages I came across this bread, and knew I had to make it as soon as possible.

Anything with lots of cheese, green onions and chives and topped with roasted onions, well you know it's going to be great! Here are the proof and out of the oven shots and I'll come back with a crumb shot later. I plan on freezing one loaf for a day and bringing it with the other Turkey Day  items.

Added crumb shot: This is a very aromatic bread with a very nice flavor of cheese and onion. The chives and scallions chopped and blended into the dough along with the 8 Oz of Asiago cheese really make a statement. The roasted onions on the top, above the cheese seemed to get a little well done but they taste great! I heartily recommend this bread for a full flavor meal. The texture is soft and delicious.

The author recommends not using a KA mixer with this dough due to the size of the batch and gives directions for hand mixing. I was able to easily able to mix and knead (hook) in my DLX. I think I could of doubled the batch with out any trouble.

I agree, you can't miss with cheese and onions.  He does have a formula in BBA that I've been meaning to try. Have you ever made the Casatiello? It has shredded provolone and salami. Happy Thanksgiving to you and yours!

This is a bread that grows on you. It tastes better through the day and I had a little with Linguine and clams tonight.

I saw that Casatiello recipe. I think that will be next on my list. We have a great Italian grocery not far from here and they carry lots of imported meats. I'll have to go in and talk to the old butcher for a while and let him suggest something.

Eric that looks amazing!! All of my favorite acoutrement (sp?) Make  scrambled eggs with freshly ground black pepper sandwich in the morning made with that bread!!!

Thank you all for taking the time to comment today. I'm sure we are all in the middle of a hectic day of baking/roasting some thing or another.

I told my family a week ago that this year I was going to be in touch with the DNR folks who keep track of road kill deer in Wisconsin and try to get a deer who didn't make it across the road, thus saving a turkey the fate he was in for. Trust me only half of them were upset! I love serving some humor with a well done bird every year.

Today I'm baking Norms Double Knotted rolls. I wanted to try them first before I attacked the double batch I have in ferment, but I didn't get to it. I'm hoping to get 22 rolls out of the batch.

I just pulled the last of the pies out of the oven (pumpkin, apple and apple/cherry) and the grill is warming for the bird.

So, Happy Thanksgiving to you all. We do have so much to be thankful for. Keep our troops in harms way in mind and the poor souls under seige in India today.
