i also made the struan from the brother junipers slow rise by reinhart and i tasted really good the sweetness was good and it was soft it does have alot of dry yeast in it and i had to add more water because it was initially too dry but it produced a great loaf i didnt get to take a better pic before it got slicd and my camera isnt that great i wish i could of got a better crumb pic so you can see all the little spec of polent in it but here it is

Great looking loaf!

No, you don't need to score it. And, yes, you can cut back on the yeast a teaspoon or so and give it more time instead.

thanks alot yeah the yeast probably should be cut it leaves a slight taste in the bread and probably contributed to it being a little more dry than it should of been but i still think it needed more water also. thanks alot for the compliment floyd happy baking.
