Been reading here a LOT and finally I have something I want to say!

I want to say how much I appreciate this site.  I have always loved home made bread but never seemed to be able to make any really "good stuff".  Even with my bread machine, it still wasn't the good old fashioned home made bread I wanted.  And it always came out...well...ugly.  But guess what!  After lurking around here and taking tips from some obviously great bread bakers like you guys.......

LOOKIE!!!!  I CAN MAKE SOME FAIRLY DECENT HOME MADE BREAD NOW!

So thank you ALL.  Thank you very much.

I made a half batch and added 1/4 cup of gluten and lecithin to the mix.  Flour was 1/2 all purpose and 1/2 whole wheat (Hard Spring) I ground up myself!  YUM!  Couldn't have done it without knowing all the slick techniques learned on this site though...like autolyse, and the "window pane" thing, the "french fold" video, the slashing, steam in the oven....oh so much I have learned here in such a short time. 

I think I'm having waaaay too much fun with all this.
