50th Anniverary somewhat mini cake

I'm kinda proud of it after all the "oops" I had making it's twin spare! Details of it's "history" can be read in my blog. http://sweetmelissas.blogspot.com/  After a couple of "eh" cakes, I'm SOOOOO happy this one turned out as I envisioned it.

 Looks good.....

 Is it a real cake underneath, scratch cake, box cake or fake cake. I ask because it looks to be quite deep, did you have problem baking it.

 The only time I make a fairly deep cake it is a rich fruit cake...... qahtan

I guess I don't know what you mean. THis is a mini cake, so the bottom is only 6" diameter, middle is 4.5" diameter and top is 3" diameter.

All my cakes are from scratch and no problems baking. Since these are small, actualy the middle and top tier were cookie cuttered out of a larger cake so that they are flat and even. To stack, you have to put supports in the cake to hold up the next layer though.  If it were a LITTLE smaller, I wouldn't have done that.

Well, then that means I did a good job in making it look "big".

I've baked full size cakes before. The key to getting the bigger cakes to cook properly is to use a metal piece in the middle (forget what it's called). It helps it cook more evenly. When you flip the cake out, ou flip the cake out of the center of this (greased and floured of course) and then plug it back into the cake. No one will ever know.

I thought it was going to be large like this one, 14, 12, 8. this was my wedding cake.

I hope one day to learn how to make these kinds of cake , it looks great , did you attend some courses???

Can i find some helpful site on the net to learn how to make such great cakes>did you use fondant for the covering or almond paste??
