Greetings from a new baker

I wanted to say hi and thank you.  I have been lurking for a month or two and decided to sign up.

What started as a whim has turned into an obsession.  Before COVID I had never baked a loaf of bread and now I can’t wait to see how each loaf turns out.  Some are magical and others are duds but it’s all been fun.

My family thinks I am crazy but they love the morning toast, paninis, grilled cheese sandwiches, turkey sandwiches, pizza, French toast, discard crackers, waffles, pancakes and my enthusiasm.  They may roll their eyes at me but my wife and children support me by buying baking gadgets and compliment my efforts even when the bread looks like a frisbee or deflated football.  

All of my tabs on my iPad are now sourdough baking related. I feel pretty good about my schedule and process but of course I am still learning.  The learning is the fun part and I absolutely love it.  I still am trying to wrap my head around a few things like over-proofing and some of the nuisances.

anyway,  thanks for the forum and a place to learn to get better at sourdough baking. 

In in addition to this forum, I need to compliment LittleSpoonFarm, theperfectloaf, butter and air (I live at high altitude), and  Bake with Jack for the information I have garnered.
