pumpkin yeast bread " recipe & preparation steps"

Hello everybody,

It was my first attempt to use pumpkin in baking ,i was totally amazed from the result, the bread was light , veeeery delicious, my kids could not wait even to fill its slice with any filling, so i will put the recipe and try it, you will not stop making it.

I got the recipe from a french book" i think that the original version was in english because the author is australian, i do not know exactly, her name is Ann wilson , the book name is " Pains et petits pains".

I love the book because 99% of the ingredients used are familiar in Egypt,except " Rye flour"< we do not have, can you send me some pleaaaaaaase, hahahaha,There is a pumpernickel recipe,and i can not do it ,do not you feel petty for me????

Anyway , i will show you the pumpkin kind that i used in the recipe,

That is the only kind we have in Egypt, and we use pumpkin rarely, that is a shame !!! we have very good pumpkin harvest.So i tried to use and create a lot of recipes " in which pumpkin is a main ingredient".O.K, i will start now, here is the recipe:-

7g. yeast" i used fresh yeast , about 1 tbls"

1/4 cup of pumpkin boiling water " in the recipe they boiled the pumpkin, i did not , i cooked it in the oven, i made it puree, and i left it in a strainer to get rid from its juice, and i used this juice to prepare the dough"

4-41/2 cups bread flour.

1 tspn salt

1 cup of pumpkin puree " about 300 g. raw pumpkin", it was different with me because this kind of pumpkin is veeery juicy, i got a lot of liquid from it"

1/4-1/2 cup pumpkin water.

1 beaten egg.

2 tspn water

pumpkin seeds for decoration.

instead of explaining i will let you with the pics, and feel free to ask about everythink , that you think it is not clear.

Here is my lovely yeast" i am in love with yeast"

I gave it to eat " some sugar " i made for her some massage , then i cover her to take a nap,she became now very good and happy,

I started to prepare the ingredients, then making the dough.

I kneaded it for 10 mn,it turned soft and smooth like a baby skin.

I put 2 drops of olive oil on it to prevent it from sticking . then i covered it with a clean towel " of course"

shshshshsh, i warned all my family members, not to disturb my baby" i am fool , am not i???"

it is ready now , let us start the game,i re knead it for 2 mn.

I took 1/4 the dough,

then the remaining dough, i made with it a ball, and i put it in a sponge cake pan after oiling it and

sprinkle it with flour" i used corn flour"

I glazed it with the beaten egg, then i decorated it with the rubbon.

I glazed it again, i let it to rise.

My oven was too busy this day, so i let it more than an hour" it became like a monster" oh!lalala!!!

I forgot to tell you about the pumpkin seeds.

I baked it on 210c.

Sorry for taking too much time, but i think the details will be so helpfull for beginners.

And the crumb looks as if it would give such delight to bite into. I wonder if it's a little like the Italian panettone -- in texture, I mean, not taste. Have you ever tried that?

You've certainly intrigued me. Our pumpkins are just coming into season now, too, in Canada. I must make time to try this. Thank you very much for detailed pictures and commentary. Very helpful.

Intriguing too about the lantern etc. I will look forward to seeing your next creations.

Thank you for your nice words, No, I have never taste the italian panettone, but i checked the recipe, i will try it then i will tell you, i saw the ingredients and the crust, i do not think that they are similar, but i can not judge till i try it.

Go on and try this recipe , you will not regret.

It is now time for our pumpkin harvest also. I can hardly wait to do this bread I have checked in every day since I last spoke to you to see if you had had time to post the directions. We have those same pumpkins here. We use them to make pies for the holidays. We make a special trip to market the first Friday in October to get pumpkins for the seasons. First we use them in Halloween; to carve into scary faces for the children; then we bake pumpkin pies for Thanksgiving and Christmas. I can hardly wait to give your bread a try!

And by the way my Emily ask me to google Alexandria Egypt so that she could see your country (since you didn't live in the pyramid after all!) this I find too funny also because all I remember about being 5 years old was making pretend cakes out of mud and playing with dolls. She knows about google and its uses! Different times!  I hope you had a great holiday.  I will be sure to post how my bread turns out when I get my pumpkin! I am sooo excited! Thank you for showing us something new.

Audra , are you going to make pumpkin lantern???

i wanted to try it once , and i am scare i can not do it,say to emily that aunty chahira googled for you and here it is some pics for alexadria.

i have two kids ;" yassin" a boy , he will be 6 years in october and he is in a french K.G second year, and my little "Malika" a girl 4.6 years old , she will go to her first year k.G french school.

They also amazed me , yassin can tell you about the web address of disney web site, and malika uses to remind me to check my mail.

Our days in the past were better, do not you think so??

I was used to make dresses for my doll, feed her and sometimes,put her hair in the toilet!!!!!!!!!!! hahahaha.

Go on Audra, make your bread and show me the result.

if you are going to make pumpkin lantern , show it me ,i am very interrested.

I called to inquire if they were in yet and they were not. Your home land is very beautiful, far more so then where we live. Emily said your buildings looked like the ones she had seen on the Disney movie Aladdin! She didn't ask if anybody could ride a carpet! The pumpkin pictures from last year are not very clear, especially the one where it shows it lit up but I am going to post them anyway. They are really not hard. Some people do very elaborate ones, but for children we try to keep it simple. We just trace out a design on the front and carve away! The flesh is not that thick but you do get tired of carving before you finish! Oh yea, be careful on the areas of your design that get pretty small. I have accidentally cut all the way through and took out a whole chunk and ruined the whole thing. But that's about it. (My apologies to floydm, because this reply has nothing to do with bread) Well I can't get to load the photo. It said the image was too large, that you could only upload an image 800kb and the photo was 1.76mg. If you know how to do this please let me know. I have tried to upload bread pictures before and they wouldn't load either.

Dear Audra,

Thank you, look, before uploading any picture on the net you have to compress it first on your pc.

Click on the picture using the mouse on the right button and choose " open with" then choose"microsoft office picture manager" then on the new window choose " edit picture", then "compress picture" then " compress for web pages" and save it , this will make the process of uploading any picture very easy, if you have any other question , i am waiting , waiting also to see your pics.

Our Jack O' LanternOur Jack O' LanternNight view,Night view,Night view of the othersNight view of the othersThese are our pumpkin lanterns from last year. It is easiest to draw out your design before you cut of course. The flesh is about 1 inch thick. You cut out the hole on top first so that you can reach inside and scoop out the flesh and seeds. The children love to do this job because it is very squishy and gross! A spoon will help make the inside neater after they get the "guts" out. The cut out whatever design you wish. You can put a candle inside, or we found some small oil lantern with a wick that will last maybe 8 hours overall. That is cheaper in the long run for us here, as it only burns for maybe three hours per night. The pumpkin will last carved maybe a week to a week and a half, but it mainly depends on the weather ( cold/ hot and rain of course will affect it)I am sure your children would love it! We do it as a family and have a great time. Let me know how it turns out.

  I know it is sort of cheating, but do you have cake mixes in your grocery store? If you do I have a wonderful pumpkin cake recipe to send you. It is super moist and delicious. It is one of my family's favorites. It is called a Gooey Butter cake and this one uses pumpkin. We made one last year and the center stayed a little too gooey, so I made puff pastry cups and scooped the filling out and put them bake in the oven for a few minutes and they were the hit of the evening! I don't know how you would change it if you don't have the cake mixes in the store, but I'm sure we could figure out something, as they are basically the dry ingredients of the cake/ you add the oil, eggs and water (dry milk is an ingredient in the mix ) Let me know and I'll post the recipe.

wonderfull pics , audra , i like it sooo much, but i am not sure if i can do like this one.

we are in holidays , we made also a lot of cookies and biscuits.I am looking forward to see emily and her cookies.

We do have cake mix , but you know i always make cakes from scratch , but i can buy it , to make your recipe, i still have pumpkins puree in the freezer.

I am really interested of your pumpkin cake recipe, and i am waiting for it, thank you Audra.

The tray was cute and the kids loved it, but Chahira your tray of goodies for feast was wonderful! Were those cheese straws on the top? We love those! And all those different kinds of cookies and biscuit! I am amazed you can find the time with 2 little ones to "help"! I will post the cake recipe the first chance I get, I think you will like it. I got a pie pumpkin this week and have baked it. It wasn't as juicy as I would have liked it to be, but I feel it was due in part to a very dry growing season here. I am draining it in cheesecloth to get out what I can. If I cannot get enough, I may do a sweet potato also and try to "borrow" some juice to get enough for your recipe. I can't wait to try it. The weather has cooled off in the last several days and it makes your ready to get in the kitchen and make the whole house smell of the good things coming out of the oven. I can't wait to make your bread! It sounds like some of the others have already beat me to it! I'm sure it will be a treat! Thank you so most for posting the recipe! Thank you Audra,

all of these biscuits are sweet , none of  them are made of cheese , these straws biscuits  are orange flavored biscuits , and we use ammonium bicarbonate beside baking powder , and of course eggs , butter, orange zest.

The weather here also cooled off, and i have a lot of goodies at home , you can not imagine how i am trying to force myself not to bake!!!!

But these days i want to make some baguettes or croissants.

I am struggling to find time to bake and cook and in the same time taking care of my children , but baking is my passion, and the kids used on that and they help me sometimes. Yassin can roll the pizza dough and Malika shaped with me the chocolate ships cookies.They are amazing.

I am waiting for your cake recipe , take your time.

I have baked squash waiting.  I've noticed that if I bake squash with the peel, it saves a lot of work but I have to remove it as soon as it is cool, otherwise it can get bitter overnight.  

We have squash festivals this month in Austria.  One competition can be very decorative, while the squash is still growing, a design can be scratched into the skin, it heals making patterns that can be very beautiful. (something for next year)

very good starting, i baked it too,first , and i peeled it when it was still warm, it is the easiest way to peel it.

I wish i can attend such festivals, these events are very interresting to me .Please share with us your pumpkin bread pics.

Lovely bread Chahira. 

That's the same kind of winter sqaush we get here and when the season is high, we can buy a HUGE one for about 2 euros. Baked, soup, pie, etc. I'll definitely try your bread!
