Carmelized Onion and Chipotle Bread

Hello all,


    I'm new here and fairly new to breadmaking.  My wife and I have only been doing it for about six months, but we both really love it and I just thought that I'd share one of our more successful recipes.



Carmelized Onion and Chipotle Bread



2 1/2 teaspoons active dry yeast

1/4 cup lukewarm water

1 teaspoon sugar

1 cup water

1 teaspoon salt

3 1/2 cups flour (unbleached)

1 egg (large, beaten)

1 tablespoon vegetable oil

1 large sweet onion (finely chopped)

1 can chipotles (seeded and diced)

1/8 cup reserved adobo sauce from chipotles


  1. Caramelize the onions over medium high heat and remove to paper towel to drain grease.
  2. Add yeast and sugar to the lukewarm water.  Let sit for 5 minutes.
  3. Add salt and oil to 1 cup warm water and stir in activated yeast.
  4. Add 1 ½ cup flour, onions, chipotles, and adobo to the bowl.
  5. Add enough of the remaining flour to form a stiff dough.
  6. Turn dough out onto a lightly floured surface and knead.
  7. Place in a greased bowl, cover, and let sit until doubled.
  8. Punch down and let double again.
  9. Cut dough in half and allow to rest for 10 minutes.
  10. Shape dough into two round loaves and place on a greased cookie sheet.
  11. Cover and double again.
  12. Bake at 375 degrees for 40 – 45 minutes.
  13. Let cool on wire rack.

This came about when we wanted something other than cornbread or crackers to eat with chili.  It's got a good smoky flavor and just a little heat.  I'd have a picture, but it went fast (we have friends over for dinner).  It's got a nice yellow color to the interior and the smell is amazing.  Please let me know what you think.
