Adding sugar to steamed bun dough

Hello, 

I’ve recently tried out a new steamed bun dough recipe but I would like to make it a bit sweeter. If I were to increase the amount of sugar, would I have to make any other adjustments to the recipe? Thanks so much. 

recipe:

 

100g milk

38g water

1/2 tsp yeast

25g sugar

250g flour (red lotus brand)

1/2 tsp baking powder

5g oil

1/2 tsp shortening

It should change the fermentation time a little, but other than that you don't need to change anything.

How much sugar did you want to add? 

Sugar will often act like a liquid in dough so it might be wise to measure out water but hold back just a little bit and see how the dough reacts with the extra sugar before adding all the rest of the water, little by little into the dough. You may not need all the water.
