Oatmeal loaf using Oatmill flour

I found a new flour on the shelf the other day, so decided to try it out, as I had too much white starter built up from David Snyder's Pain de Campagne variation I have been trying.

 I have written it up here so leave you to read it there :)

 

But here is  a pic to tempt you :)

Thanks!  The blog started out as the diet diary my doctor asked me to keep ... but has sort of migrated recently to considerably more interesting things.... LOL

or is it a wheat or combination? or is it just a name...Oatmill?  Where is the Oatmeal?  Sorry, I just can't fathom how the loaf stayed together?

Hi Mini,

Oatmill is the proprietory name for the flour made by Allinson's here in the UK - here is a link to the flour:

the oatmeal flakes, pinhead groats and bran make up 30% of the flour, the rest is Wheat flour with added gluten.  The oatmeal bread recipe on the Allinson site (http://www.bakingmad.com/recipes.aspx?nID=12&nSubID=228) uses it as an addition to wheat flour, 300g wheat to 200g Oatmill ,  I decided to use it with only a slight addition of wheat and my beloved rye flour  to see how it would come out.

 The dough was very lumpy and wet, and wouldn't fold easily in the bowl as I had done for the Pain de Campagne DS style , I tipped it out and flattened and envelope folded in a tray as I had done before I discovered the new method.  I do think I got better gluten development that way rather than folding in the bowl. 

the bread is delicious, I really like it.  The oatmeal has softened right up and is not perceptible in the finished bread, and the sesame works nicely with it.

Yes, it does look like it can stand on it's own.  Thank you for the information.  Your loaf did come out lovely and I can almost smell the crust and roasted sesame on top.

Just finished breakfast.  Oatmeal toast with a) Canadian set honey b) Marmite.  Both delish!
