how do you get bread out of a banneton without deflating it!

with either pure rice flour or half rice flour, half all purpose flour. The rice flour is key for preventing sticking.

I second the motion to use rice flour.  I’ve not had a single dough stick to the banneton since using rice flour.

Third vote for rice flour or  rice/whole grain combo. 

I've also sprinkled in wheat flakes as well.  Be sure to not shake around the banneton after dusting it.  You'll find it falls off the sides a bit,  and you'd rather it not do that.
