Esmach Tabletop SP5 Spiral Mixer (TMB Baking - SFBI)

If you are looking to upgrade to a spiral mixer that can handle any dough you through at it and never worry about the motor or drive - this is the way to go. It is made by Esmach in Italy and sold by TMB Baking in San Francisco. It is gear and chain driven with a rotating bowl and spiral hook. It doesn't blink when you put 4kg of the strongest bagel dough, NY, or just a nice Neapolitan dough. I've used it extensively for both pizza doughs, enriched doughs, and bread doughs. Ideal for the enthusiast baker or maybe in a small commercial setting. 

 

It is a tabletop mixer, and I am able to lift it and store in a cabinet, but it does weigh around 60 lbs. due to to all-metal construction, so there are going to be some people who choose to leave it on the counter.

 

It does not have a breaker bar, but I have found that a strong wooden spoon inserted through the slot in the plastic cover does a nice job breaking up the dough when you want to. I've also had good success using double-hydration when you want to mix a high hydration dough in the mixer. The bowl is not removable, but it isn't that difficult to clean especially with a small plastic scraper.

 

It should last for several generations and is a joy to use.

Just making sure you're saying that the bowl is permanently attached to the mixer base and can never be lifted off?

How easy is it to get a large load of very wet dough out of the bowl and onto a work surface?

Yes - the bowl doesn't come out. To get a few kilos of 70%+ hydration dough out of the mixer isn't a problem. You just use a plastic scraper and gather the dough.

I went to the Esmach website to read about the mixer, and didn't find the same model - at first I thought it must have been discontinued - but it's still in production! Apparently, this model was always made by Avancini, another Italian manufacturer, and Esmach was also distributing the same machine (same model number and everything). Esmach changed their lineup, but Avancini still sells these, new.

One person who kept a blog on this site a few years ago got one of these machines, and found it fairly similar to (and worth comparing with) Häussler Alpha, a pretty solid recommendation IMO. I think they gave the Häussler a bit of an edge in certain details, but to me it sounded as if they considered the two machines "in the same league".
