Clayton's oatmeal maple - +Jalapeno

I'm working on this one from his New Complete Book of Breads. Pg 188-189. 

I added jalapenos because I add them to nearly everything lol. Seriously,  most of the people that eat my breads want jalapenos in them - except the ryes.  

It's smelling really good.  That maple syrup/ jalapeno combination will make for a fantastic spicy sweet flavor.  

I'll post pics when it's out.  Clayton's recipes are great.

Had to pull it out a tad early because that maple syrup wants to burn if you don't stay on top of it.  Caught it just in time.  Looks good.  Crumb shot tomorrow.

There's so many good recipes in it. And they fit my schedule much better - much less time babysitting the dough etc.

They have been very forgiving as well.  I've been able to substantially modify them due to unforeseen changes in my schedule, and they still turn out a treat. 

The hardest part is trying to figure out what to make next from it.  Lol.

Hmmmm. I think one sign of a well-made well-tested recipe might be that it's harder to ruin. Also the idea of working with the ingredients and not against them (the author knowing how to not "push his luck" too much).

Sometimes those other kind of "intentionally push your luck and accomplish something surprising" type of recipes are fun to watch someone else do, but that type are too tricky for me.

Jalapenos in everything... Definitely not my style... But it looks like you did a beautiful job, and if you like it this way then keep making it!

Anticipating the jalapeno black-forest cake and the jalapeno tiramisu, whenever you find the time. ?

Thanks David! Well sometimes it's banana peppers too Haha. Maybe I'll try a jalapeno cheesecake.  The cream cheese should help tamper the peppers.

Someone asked me why I talk about bread so much.  I don't know, it makes me feel like Dr Frankenstein. I'm still not good at it and don't know what I'm doing.  All I have are pictures of finished loaves.

You can throw jalapenos, or onions,  or whatever you like in it and more often than not it turns out really good.  You know where I'm coming from.  

If we're on a bread website conversing,  then I KNOW you know what I mean.  Lol!

Really good flavor.  It's got the sweetness of the 100% maple syrup mingling with the jalepeno peppers.  The only thing I'd change is add 2x the jalapenos!  Hehe.

That's a keeper imo.
