Best Stand Mixer for Rye Bread Dough

Does anyone have thoughts on the best stand mixer for sticky rye bread dough? I currently have a KA Artisan mixer, and most of the dough sticks to the sides when I use the dough hook or paddle attachment, so I spend a lot of time scraping the bowl down. I've searched through the forum and seen occasional references to certain stand mixers being good or bad for rye dough, but I was wondering if anyone has more advice. As a side note, I'm looking to spend $500 or below.

BakerG, when you said the “best mixer” 2 came to mind. But when you mentioned less than $500, both went over. An ultimate mixer IF you have the counter space would be a Famag from Pleasant Hill Grains. But I own an Ankarsrum and love it. They go for around $700 but see THIS LINK for great deals on like new units. I bought one of these from Ashley McCord and would not have known it was used if she hadn’t told me. AND the original warranty remains. I don’t think you’ll find a better mixer for the money. Any of the units on the Ankarsrum page will more than fit your requirements.

I want this mixer so bad! I work hard for my $$, so.. the price is not that much of an issue. (I deserve a treat) Alas the size is a huge deterrent. Until I can finish my time here and get out of dodge my very capable and sufficient Bosch Universal will have to do. Even the size of my new scale is a bit of an issue! My old scale  fit under the microwave.

The Famag needs a dedicated space on the counter. They weigh 60-70 pounds and it needs overhead clearance for the lift up hood.

Lance, aka “albacore” has a Famag and absolutely loves it...

I also have an Ankarsrum and highly recommend it. For the extra money you would be getting a high quality product that will last for your lifetime. AND it has a built in scraper, so is ideal for your bread needs (or kneads ; )

I've only heard good things about the Ankarsrum, but I'm afraid it's just not in the budget right now...does anyone have experience with baking rye breads on the Bosch Universal Plus? Does the kneading attachment incorporate dough from the side walls ok?

I find that most of the time it wipes the bowl clean.

I think it's safe to say that while the Bosch Universal is a home appliance and not an industrial type one, it gets consistently recommended for good reason. It does the job right, and it's got more power and capacity than most homes will regularly use.

A question for those "in the know": One of the Bosch models had a tendency for its hook to lose contact with the dough and just spin around, if you tried to make an extra-small batch. Is this the one, or was that a different Bosch?

(If you never make an extra-small batch of dough, you wouldn't care about this anyway.)

This is very true for the Bosch Universal Plus, not great for small batches. The dough extender helps but still. What I did was, I picked up a small bowl and mini dough hook for the BUP. It works better but I am still not 100% happy with the BUP for small batches. I have come to the conclusion that if the batch is that small, say a test batch of one loaf, it is best to just mix/knead by hand.

I mix them up by hand. However that is not to say the Bosch could not handle it.

David, that problem was with the center column Bosch mixers   the Universal, the universal plus aka BUP, and the Concept.  The Compact has a different bowl design, and there are some doughs it struggles with, though not as bad as the others, IMO
