Chocolate chip sunflower maple syrup loaf

Here's a vegan chocolate chip, sunflower,  maple syrup I just baked.  Turned out well imho.

I used my rye/white starter,  25% sprouted wheat,  25% whole grain, along with KA bread flour.  A touch of maple syrup.  It's got good flavor.  

It was 76% hydration.

But It's a tad bitter for my taste.  I'll work on it some more.  Might double the syrup and increase the chocolate chips.  It's vegan,  so the dark chips aren't as sweet.

Do you think the bitterness is coming from the chocolate? Or something else?

I'm sure the Enjoy Life dark chocolate is contributing to the bitter taste.  The sunflower kernels are as well. 

My hunch is that the syrup wasn't enough to counteract it.  I'll add more syrup, and may introduce some vanilla extract to help it out a bit.  

A friend just sent me this info.  Looks really informative if you're blending some of these flavors.
