Do you know how to make this?

Hi Everyone..

I bought this bread at a local market and would love to make it. It is one of the nicer breads I've eaten in a long while. There was no description on the bag as it was from a farmers market and I didn't ask at the time I picked it up. But it's a beautifully soft crumb, but with a firmness to it at the same time. I'm assuming it's simply a dark rye bread loaf. Any recipe recommendations? Thanks in advance! frank!

Suggested first step: Go back and get another loaf, and say "This was so good I came back for more - what's it called?" ?

Be careful toasting it - it's already so brown you'll never see when it's done. ?

A black bread. Perhaps a mix of coarse rye and wheat with some molasses and seeds. 

Why not try to find a simple russian black bread and build on that?

In a world of google you'll be amazed at what you can find.. I was like a deer in headlights, I just couldn't look away and watched the whole thing.. my ears hurt now..

The only thing you might find difficult to find is red rye malt. If you can get some other malt flour then that'll have to do. If not, then use rye flour and add in some malt barley syrup. 

Try a plain recipe and see what you think. 

I'm also under the impression that while the bread you bought looks like a black bread it might be their own version not using a traditional recipe as such and with some added charcoal.

The bread I had was light and fluffy.. remarkable really.  Your video makes a fairly dense bread. I think I'll go buy another loaf and talk to the people there and see what they'll tell me.. The more I think this isn't a typical rye black bread. You're right! The crumb looks too much like wheat. If there is rye in it it's minimal. I'm leaning towards this being a malted wheat bread with seeds and cocoa or charcoal.

Watching that video I found myself tossed and torn on the horns of a dilemma - overcome with curiosity and yet …. fearful that I might be thought to be colluding. Still, good bread is the most fundamental tool of communion among mankind. How could its pursuit be deemed a sin?

I have no idea.. but I've come to learn and experience that the road to hell is paved with good intention.. but so long as I've got good bread to eat along the way, it'll all work out in the end.. :)

Seriously, given the color and texture, I wouldn't be surprised if there was some cocoa powder involved.

Yes, that or the previously-mentioned charcoal. Or not. I'm clueless.
