Differing Weights

Hello Everyone. I'm Marion and I need some advice, please.

I have a Kenwood bread machine that has weights of 750 and 1000 grams. However, the crusty bread mixes I have bought indicate loaf sizes of 500 and 800 grams.

Which size should I follow, please, and should I adjust the amount of water?

When you buy a mix, you're essentially stuck. My best advice is: Don't buy mixes anymore - make your own! That way, you control what goes in.

However, now that you have them, it would be a shame to waste them. It seems to me that 800 g ought to be close enough to 750 - you could perhaps throw away a very small amount if the extra 50 g might cause a problem. Yes, do adjust the water too - a little less of everything. Proportion is what counts.

For the 500: How about buy another of the exact same, and make it 1000? Then you won't have to adjust anything.

When you're making your own as opposed to using a mix, you can read from any size of recipe, and use "baker's percentage" and your calculator to determine how to make it fit the size you want. For example, if you find a recipe that says it makes an 850-gram loaf, you increase or decrease all the numbers in the prescribed orderly fashion, to get a 750-gram or 1000-gram result.
