Lucy's Latest Hack on Football Night Pizza

The Lucy is u to her latest lay hack that puts her other lazy hack's like NMNF starter to shame.  This time she didn't even make any dough at all and claimed victory,  No smoked meats or veggies either but at least she got pepperonis on some of them this time.

she had me make a batch of pizza sauce just like always but lazy loafer didn't specify fire roasted tomatoes this time either.  Pizza sauce isn't like other sauces Italian sauces around here.  It has more red wine, moire garlic and way more Italian herbs and hot chili flakes to make it spicy as all get out.

She didn't specify fresh mozzarella either foe some reason.  She said she didn't because I was too lazy to go to the tore which was totally wrong on several levels like the Chiefs play the Evil Empire.

She didn't make 2 -14" pies for the 3 of us this time but instead made 5 of the tiniest ,individual pies where you could ;ad 4 of them onto the oven stone with the peel at one time!  Talk about lazy, she used store bought tortillas !for the crust - such sacrilege!

I had to make the salad too!

We did grill the onions and the Italian sausage and chopped up a couple of mushrooms and a bit of yellow bell pepper and snipped of a bunch of fresh basil from the bush growing n the back yard but she just watched me do that of course  so we is pretty liberally used here.

Both has sauce, mozzarella and Pecorino Romano gated on top with basil garnish bit the sausage ones had yellow peppers and the pepperoni had the mushrooms.  I have to say that the crust came out tasty, not burned on the bottom after 10 minutes at 500 F and crispy too with no folding and crunchy.  Makes me not want to ever make pizza dough again

We have about 5 pizzerias here every mile so if they knew you were spreading these sacrilegious tales about using store bought soft tacos instead of real pizza dough, they might be sending some visitors down to your neck of the woods!

In any regards, they do look awful......tasty that is!

Max and Lexi said to keep that Lucy in check and they don't want to see any more posts with "fake" pizzas.

the crust was.  Thin and crisp without being burned on the bottom.  I thought that I was being innovative but my daughter said her millennial friends make pizza that way all the time and pulled up a whole crowd of people on Pinterest who make a thing out of tortilla pizzas with all kinds of weird toppings.  We are so far behind the times.  The only thing I miss is the rosemary, sun dried tomato and garlic in the dough but I could make my own tortillas and put in some for pizzas instead of tacos and be the King of Homemade Tortillas for Pinterest Pizza if I was 40 years younger and way more stupid, ignorant or both.

Lucy hopes the East Coast pack does not freeze to death for lack of warm crisp pizzas delivered to their den from all of those pizzerias making  that floppy, soggy, foldable NY style Pizza:-)  Happy baking and pizza making Ian.  Time to get that pizza grill attachment fired up to keep the black ones happy!

Always thinking out of the box, what a great idea! I may just skip learning how to make pizza dough and just slide into the hack!

Looks great. The Italian sausage sure makes me feel homesick.

named Mod Pizza where you walk down the counter and tell them what to put on your pizza and they make it right in front of you then you sit down and 3-5 minutes later they bring it to you.  I told my wife that it looked like an unbaked tortilla they were using for a shell and it didn't look too good,  It wasn't terrible but we would never go back for another one.  I knew Lucy could do better if she made her own tortillas but she was too lazy to even do that.  It came out just fine anyway like most of her lazy things she comes up with.

We like hot Italian fresh sausage smoked in the smoker best with smoked onions and mushrooms but grilled is fine too.  We also like smoked hot Andouille or the already smoked beef hot links made by Earl Campbell on pizza too.  Many folks like Margarita pizzas but we like the meat ones with red sauce best around here.

In a pinch i like the crust hack just fine!

but never a cheap date from what I hear!  Before long she will be using sauce out of a jar and imitation cheese that you don't even have to refrigerate!  It's really getting hard to watch her crawling to the bottom of the barrel.  Pretty soon she will be drinking box wine to chase the fake pizza down.  i hope I never see her hit rock bottom lazier than dead mode.  I don't think she can sleep more than 18 hours a day but she has fooled me all these years already.   I have to admit that her not barking like crazy when the doorbell rings now is a blessing so being deaf suits her and me just fine.  Still, she is pretty pathetic on the lazy scale now when it comes to doing nothing worth doing, but laziness does fit her like a custom made suit.  I really need to ask her where she gets her clothes made though:-)

Pizza sauce is not one of my strengths - yours sounds delicious - would you share it? or is it a closely guarded secret?

sounds as if Lucy is feeling much better than she was! I wonder what bread surprises she has for us this year

tomatoes, throwing son some fresh basil and minced garlic and crushing the tomatoes between your fingers for a few minutes and that is it.  Lucy's sauce is more complex and difficult but still very lazy.  

Sweat half a minced yellow onion in a medium sauce pan n some EVOO.  Then add 4 cloves if minced garlic and 1/3rd of a small can of tomato paste at the same time and saute until the paste starts to just brown a couple, three minutes.  Add one glass of red wine, 150 g, and simmer until the wine is reduced by half.  Add pepper flakes to get it spicy as you want, 1 bay leaf, some dried Italian seasoning and dried oregano and some fresh basil.  Add one can of fire roasted diced tomatoes and 1 small can of tomato sauce.  Now you simmer for an hour or two or 3 adding water or chicken stock if it gets too thick.   I then take out the bay leaf and blend until smooth with a stick blender, totally optional,  and then pepper to taste.  I usually don't have to add salt because of the salt in the canned tomatoes.  Then refrigerate overnight or until you need it .  After making pizza for 4 people, I usually have enough left over to freeze in two containers - making sauce once and pizza 3 times is grand as Lazy Lucy likes to say and the sauce freezes well

If you want you can add sliced crimini mushrooms with the.onions too - I usually don't if I'm putting them on the pizza and do if the sauce isn't for pizza cutting back the hot pepper flakes some too.  It makes grand sauce for anything needing red Italian sauce.

Lucy is doing well and I did make a levain yesterday now retarding for some kind of bread that isn't made in a loaf pan but I want to smoke some paprika with alder wood today - so the bread will be tomorrow most likely.  Time to get the autolyse going and the levain out of the fridge though.

i will need to get a couple of ingredients or just go wi5h what I have - in next week or so I will have heaps of fresh tomatoes ready - some are a paste variety that I am growing for the first time.  maybe a combo of fresh and bought.  it sounds sooo good!  Hubby still not eating much so I am quite restricted but I love pizza and will try this as soon as I have enough tomatoes....
