Hello from Montreal, Canada.

This site is a gold mine, so much reading ahead of me, I cannot thank you all enough for sharing all your knowledge and experiences.

I decided to make 2019 the year I tackled baking and bread. I'm a good cook I think, with good tools and technique, but found myself to be a terrible baker. A friend of mine makes delicious bread and really sold me on the idea.

I splurged on a Ankarsrum standmixer and am looking forward to trying many types of dough.

A good cook who is conscious of good tools and good technique is probably mostly lacking in the hidden expectations and the jargon. (Every field has hidden expectations and jargon - nothing against the baking world in particular.) In other words, not lacking skill, just experience. So, fail bravely until experience becomes yours. :)

I'm not a very patient person, which is probably why I failed in the past. Not giving time the space it needs to do its magic, not weighing properly, etc... makes multi-day bread making a gargantuan task of self control.

It will be good for me :)
