What size boule and batard shaped bannetons?

Hello,

          I made some attempts at baking bread several years ago and had some mixed success. I developed some renewed interest and have re-discovered this site which is fantastic. For the first time I will be buying some bannetons and have found some boule shaped ones in 9,10 and 12" sizes. I am going to start out by using the version of Hamelmans Rustic Bread which is featured on the site. I believe that is a recipe I worked with before but was hand shaping it which proved to be a real challenge. For two loaves the recipe uses two pounds of flour and 1.5 pounds of water. The nine inch boule shaped ones indicate that they accommodate 1.5 pounds of dough so it seems the 9" would be OK for this recipe. I don't want anything too large as I want to make normal/smallish loaves as there are only two of us to eat the resulting bread. It seems that if you have a too small quantity of dough for a larger banneton that would would get a wide, flattish loaf. Is that correct?

 

     Sorry for the long post. If anyone can suggest good average size bannetons (boule and batard) to buy it would be much appreciated. Thanks so much.

I just measured my round ones and they are 8” in diameter from the outside edges. I fit quite a bit of dough in there, usually from 750 g up to 900 g. They are rated for 750 g of dough. 

I have a couple of 10 inch ones and they are way too big unless I am making really big boules of 1200g or more. These are rated for 1000 g of dough. 

As to oval or oblong bannetons, I only have one that says it’s for 750 g of dough and that is about all one can fit in there. It is quite small. A bigger/longer  one would work better as the sides are still supported but the dough also has more room to grow lengthwise.

            Thanks so much for the dimensions on the boule shaped banneton! Could you please give me the dimensions of your oval/batard bannetons? Also,is there a site where you were able to access the weight/quantity of dough that a given banneton will accommodate? I'm also going to purchase a dutch oven and am really getting excited about getting baking again. Thanks again!

is 11x5.5x2.5 inches. The weight of the dough is holds waa in the paper that came with the banneton so I can’t gelp you with a website. Sorry!

FYI, in my pantry:

Oval brotforms: 6" x 10" (700 gr dough)
Small round brotforms: 9" diameter (1 kg dough)
Large round brotform: 12" diameter (2 kg dough? Never used it)
Linen-lined bannetons: 11" diameter (2 kg dough)

All dimensions given were measured across the tops.

Hammelman's Rustic is a great place to start for a returning newbie.  When you're ready to move onto naturally leavened breads, Flo Makanai's "1,2,3" will get you going.

Thanks Tom! I've got Hamelman's book,among others listed in the book section of this site waiting for me at my local library. Figured I would give them a test drive before I commit to buying a couple. Going to order my dutch oven and bannetons tonight!
