Looking for an ancient grain flatbread

Hi everyone I love to bake, have an outdoor pizza oven, and even carve spoons :)

I am looking for a flatbread pizza recipe similar to Brooklyn breads ancient grain flatbread that they sell.  

I found it at weigmans grocery store in a two pack and its great.  

Just wondering if someone had a clone or even an ancient grain recipe for a pizza flat bread.

I looked at the ingredient list on it.

looks like Organic Khorasan flour and whole wheat flour are the main flours with flax flour, semolina flour, millet flour, wheat flour also added.

It also has cultured wheat starch and flour, sea salt, olive oil, sunflower oil, wheat gluten, raw sugar, vinegar, yeast, water.

So the Cultured wheat starch and flour seem to be a preservative.

I have vital wheat gluten, and saw that a bit of vinegar (1 tsp) will help with the yeast, so I am hoping this weekend to try a batch if I can find the Khorasan flour.

I'm not sure what you mean by flatbread (i.e. how its different from regular pizza) but I make ancient grain pizza with Einkorn flour. Einkorn is the most ancient of all strains of wheat, is healthier than current wheat (according to the analysis by the FDA). You can apply any recipe to it, just be aware that it's not as easy to work with as is modern dwarf wheat because it lacks those long stretchy glue strands. It still works with every recipe I have tried, its just stickier, and will not hold its shape (as a dough) before baking, so I just handle it the minimum amount possible and don't push the hydration too high when first starting out and you should be fine. Just do a search for Einkorn here and review all the tips that we have already posted.
