The Right Kind of Flower..

So this article  https://www.theatlantic.com/science/archive/2018/08/wheat-genome-is-best-thing-since-sliced-bread/567673/  led me to this video.. https://www.youtube.com/watch?time_continue=154&v=DVCUGope0c8   which made me think if there ever was a good commercial for home milling, this video would be it.. both the article and the video are worth taking a peak at.. if you only have time for one, watch the video..

To have a mill.  I just bought one, and it just arrived.  Went to my local Organic "mill" and bought about 80 kg of wheat kernels (they laughed at me when I called them berries) milled a tiny bit just to smell it and OMG, it smells NOTHING like the stuff you buy.  Very interesting.  Waiting for my starter to wake up, then I'm going to bake me some tasty bread!
