Video made me want to try sprouted grains

This Peter Reinhart video from 2014 has piqued my interest in making sprouted grain bread.

Reinhart claims:

  • Flavor similar to whole wheat and white mixed together.
  • Long fermentations, autolyse, retarding are not necessary to produce great tasting bread. 
  • Healthier than whole grain bread: Easier to digest, increase in beneficial nutrients, decrease in detrimental nutrients.  

Thoughts?

I have played with sprouted grain flour from winter white wheat a bit.  The flavor is much sweeter than unsprouted flour from the same berries.  There are a number of steps, and it takes some time to sprout, dehydrate, then mill the flour.   I had a number of failures with 100% sprouted at first,  I was letting them sprout too long, but other than that I had some success as have some others  http://www.thefreshloaf.com/node/40502/peter-reinharts-sprouted-whole-wheat-bread

Thanks for the link to that thread. Very informative. I have a dehydrator, this sounds like a fun and simple project. Making the bread might not be so simple. Thanks!

I'm not sure about that but sprouted grain bread is better than non sprouted grain bread for all kinds of reason especially for diabetics like myself.  Lucy and I have been putting sprouts and making sprouted flour for many years since 2012 or so and she has of course made a primer for sprouting and malting like many other things.  If you read our blog will find more than a hundred of sprouted grain breads over the years!The Fresh Loaf remains the best place to find out just about anything bread wise.  This post will also help with malting.

TX  having a dehydrator helps, having mesh or other fine screens so the berries don't fall through the grids of the trays will come in very handy.
