Lucy Made Banana Bread.

This s take off from out our normal Banana bread cupcakes that we like because they are iced with sprinkles bt Lucy was not having the least bit of interest tn more work on a busy Saturday and said in the pan it goes.

It turned out delicious anyway.   

Lucy’s Banana Bread or Cupcake 

Preheat oven to 375 F degrees for loaf pan and 25F  less for cupcakes

Dry Mix:

1 ½ C plus 2 T flour

¼ tsp salt

1/8 tsp each ginger, cloves, allspice, mace

1 tsp each cinnamon and nutmeg

1 tsp baking soda

¼ tsp baking powder

1/2 C chopped walnuts

1/2 C chopped chocolate chips  THIS RECIPE USUALLY HAS 1 c EACH OF nUTS AND CHIPS

 Bourbon Fruit – add bourbon to below dried fruits in a Pyrex 1 cup measuring cup covered with plastic wrap.  Microwave on high for 30 seconds and set aside 15 minutes to plump up fruits.

2 T bourbon

¼ C raisins or sultanas

¼ C dried cranberries

¼ C dried apricots cut into raisin size pieces

We used ½ C each Dried Cherries and Cranberries for this bake

Wet Mix:

 3 mashed up ripe bananas – 4 is better but Lucy always eats one ahead of time

1/8 cup sour cream

1 tsp vanilla

2 eggs

½ C vegetable oil

½ C each brown and white sugar

1 T walnut oil

 dd ½ C sugar, ½ C brown sugar and Bourbon fruits to wet mix and stir until sugar is dissolved.  Mix the wet into the dry and stir 50 times with spatula until the flour is incorporated

Quickly fill cupcake paper liners 3/4th full or put into PAM sprayed large bread loaf pan which is way faster for Lucy.

Bake cupcakes for about 15-18 minutes until wooden toothpick comes out clean.  Loaves will take 1 to 1 ½ hours or more for wooden skewer to come out clean or better 196 F on the inside.  You don’t want the top to collapse when it cools. 

 LET cool completely (Like you can stop it)  on wire rack – 2 hours minimum.  Ice cupcakes with cream cheese vanilla icing and put sprinkles on each to decorate per the holiday or special occasion.  Makes about 21 cupcakes or 1 large bread loaf pan

Cream Cheese Frosting

Ingredients

 1/2 C butter, softened

1 (8-oz.) package cream cheese, softened

1 (16-oz.) package powdered sugar

1 tsp vanilla extract

Preparation

Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended; stir in vanilla.

Cut recipe recipe in half for 20 Cupcakes or 9x13 sheet cake.

Slicing was fine for 1/4" but the light was bad so Crumb Shot tomorrow

Bourbon soaked fruit in banana bread? Never heard of such a thing but I know I would just love this! I love fruitcake and this isn’t far from that! Bookmarking this for sure! Thanks for sharing the recipe!

on half the nuts so I cut the the chocolate in half to compensate as well.  It is still pretty killer toasted with butter for breakfast.  It made a great desert last night too.   Fruit cake, panettone and banana bread can do both so well and they all have snockered fruit when Lucy makes them:-)  Glad you liked it Danni and

This is a fruitcake-banana-bread hybrid! So many flavours going on!

This for sure makes dense and rich banana fruit bread. Though I seldom bake quick bread, I always use fat free yogurt instead of oil in fruit/vegetable-puree-heavy bread. It produces bread that is not as luscious but still perfectly moist and delicious. I'm ok with the minor mark deduction from 99 to 95 considering the fact that half of the calories are cut. Because this means I can eat twice the amount and still feel good about it (This is not the right attitude, please don't learn from me...) :)

that needs to go in here.  At least half the chocolate and nuts were missing to make up for the oil:-)  Take away the flour, up the fruit a bunch and you have Lucy's 1949 Gold Rush Fruit Cake pretty much!  This is so good it is easy to eat twice as much as twice as much:-) Had two slices for breakfast instead of 1.  Yummy as can be.  Glad it got a 95!

95 only if yogurt was subbed for oil. The one mark was deducted for the missing half of the chocolate and nuts :)

Of course you have to eat at least 2 slices for breakfast! My stomach will feel empty and I'll fail to concentrate all morning with only 1 slice of bread for breakfast.

Fruit, booze, spice, chocolate, nuts and cheese all in one pan! The crumb must be absolutely bejeweled with fruit and nuts!

Did this bake by itself on the patio or did you have to use an oven? I know it has been very hot in Phx.

it didn't need it like a naked cupcake would:-)  Yep, this one was baked in the toaster oven on the patio on top of the smoker.  After last weekend's pizza my daughter said ....why didn't you make the pizza on the grill Dad?  My wife said ....no more oven for the rest of the summer:-)  As it was baking my wife kept saying isn't it done yet?  And then, while it was cooling, several times she said.... have you tasted it yet?  I heard her talking to our daughter on the phone saying .....no I haven't had a taste, Dad hasn't cut into it yet ....but he better pretty soon.  They know how good this BB is even with no Icing:-)

It's going to be 118 F on Tuesday the hottest day of the year.  Normally the hottest day of the year is in June before Monsoon comes.  Heat and Monsoon is never good;-(  I haven't baked bread in a couple of weeks it's been so hot but this Friday it will be another Mini Oven patio moment for sure.....and the rest of the Summer which lasts till the end of September:-)

I froze half gust just in case you come by for am taste:-)  Actually my SIL is due in next weekend and coming over for breakfast next Sunday.  It is about the best tasting sweat thing thing we have made in some time.  Just delicious.

I actually can't stand raw bananas (it's a texture thing), but banana bread is one of my favorites and yours looks incredible!!! Chocolate chips too??? Wow, sounds delicious. 

Lovely!! Lucy did well!! 

Does this freeze well?

take it out in 10 years and it will be like it just came out of the oven:-)  Well at least a year anyway!  It won't last that long but half is freezing solid roght now!  I just had some wiith French Silk ice crame on top.  Killer.  You would love it.
