STRONG BREAD FLOUR

How do I soften a bread recipe? I accidentally bought strong bread flour... I was thinking of baking cakes....I am new to baking....Please help...Can I make a soft loaf with bananas? I want to make use of the flour...

so you got too much gluten.

1 mix it with weak flour 5 - 10% strong and 90% weak

2 use 'shortening' to fight the gluten. called crisco? or something like that?

3 don't develop the gluten. -> don't knead if possible

4 destruct gluten by overstretching. -> knead for 30 minutes or more if possible (your dough gets nasty and sticky)

5 don't use or lessen salt

6 don't use oxidants

7 use sugar and fat to inhibit the gluten

8 try baking a bread

9 give it to someone else

10 throw it away after freshnessdate

How about reading this site, and then making some sourdough or yeast bread?  It will keep you busy for quite a while. If you are looking for sweet, make some cinnamon rolls.  There are lots of great recipes here.  Do get some regular flour for your cakes and sweet breads, though.
