That is a very interesting article, indeed. Good news for cake eaters!

I have often thought that the caloric count of fermented foods (like kambucha or juice kefir) should be lower, but never found any research to support this. With entropy in mind, I was told by different dieticians that the sugars convert to alcohol and the caloric count is maintained. I don't know if that is true or just speculation.

There's been lots of programmes in the UK regarding fermented carbs feeding gut bacteria and  sugars being absorbed slowly - great news for diabetics.  I must say,  that the amount of bread I eat, I should be a lot bigger than I am.  I don't know about anyone else, but I cannot tolerate eating British shop bread at all, and will go without until I've made my own bread.  I'm getting a lot more organised now, freezing loaves and defrosting, until my starter is ready to make more bread.
