Leven

My leven is ready, but I am not.  How long can it sit at room temp before I use it?

Till you're ready.

At room temp, not more than a couple hours.  But, as noted above, the fridge is your friend.  But if you think the fridge is going to be necessary, bust to get it in there an hour or so before it is ready.  It takes time to cool down and retard, and you dont want to coast past ready during that delay.
