Hi All!

Just a newcomer to this site. A very lucky Google search bring me here :D

I´m relatively new to "serious" baking. Made mostly pizzas in the past, but recently started to enjoy baking gluten free bread, pizzas and sweets treats for our celiac son and wheat white bread, pizzas and other desserts for the rest of our family.

Have you researched “sourdough and celiac” on google? There is plenty of information claiming that sourdough Levain breaks down gluten, making it much more digestible. Here is an excerpt from an article I googled. “If you're intolerant to gluten, a protein found in wheat, rye and barley, you know how hard it is to find a good-tasting bread. Most gluten-free breads are dense, dry and expensive. But wheat bread may be making a comeback for the gluten-intolerant thanks to new research on sourdough. It turns out this old-fashioned baking technique may help break down gluten in wheat. Sourdough is not only good for baking but may also help heal the gut in those newly diagnosed with celiac disease.

Wouldn't it be great if your son could eat your homemade sourdough breads?

If you research sourdough bread for nutrition, you'll quickly learned that it extremely nutritious for the whole family. The natural levain changes the bread differently than commercial yeast.
