Sourdough Pizza...a tried and true recipe..?

G'day!  I'm currently searching for a sourdough pizza base recipe.  I'd love to hear from those who have a tried and true recipe. I was just going to try one of my white sourdoughs and make a few adjustments. I'm also a newbie to the art and would love to hear of fellow afficionado's experiences.

Has anyone tried Ed Wood's recipe for a sourdough pizza base?

Ciabatta (a bit drier than normal, tho'), makes a wonderful pizza. I've make PR's chiabitta, but substitute 100% hydration starter for 1/2 the flour & water the poolish, and for 1/3 in the dough. I also add a Tbsp of oil and a Tbsp of honey on occassion. The oil makes the dough softer to shape, and the honey gives it a bit more flavor.

Here's a link to the sourdough pizza recipe I use. Generally, I'll make 4 dough balls, two of which get used immediately, and the rest go in the freezer.

I also sometimes make up the dough in the morning, and then use it later that evening, omitting the refridgeration step. It's worked great.

I use 60% whole wheat flour, but if you want to use all white flour, cut back on the water as directed.

What do you mean by "as directed". I looked a the recipe and didn't see anything about ingredient amounts when using all white flour. Did I miss it somewhere?

I have found a recipe that I really like, it has become my new fav. It is at Bread cetera, new york style pizza.

I make the JMonkey pizza every week, loaded up with toppings.  I don't make it whole wheat though..I use all bread flour. It's the first thing I made with my baby starter...his instructions are easy to follow.

The dough is like working with silk :)
