just got grain grinder, pancake question

Hello! I just got a mockmill 200 grain grinder and have not yet taken it out of the box. I am very new to baking in general, but totally new to grinding my own grain. I bought wheat montana prarie gold hard white spring wheat. I've spent literally 2 hours online looking for a simple pancake recipe. I thought pancakes were a little less intimidating than starting with bread. I simply could not find a simple basic pancake recipe for home milled hard white wheat. I did find some for soft white wheat and I can see that maybe I'll need to try that, but for now I'd love to use what I have which is the hard white. Has anyone make pancakes from hard white? I love to use buttermilk as well, but not necessary. I did try to search this site, but I am not up to sourdough pancakes yet! one step at a time...

I guess to clarify, is it a 1:1 substitution for soft white and hard white? When finding recipes for soft white, can you just use hard white or because of the gluten differences that won't work out well?

in place of the recipe's flour.  The pancakes won't be quite as tender as they would if made with a soft wheat flour but probably not enough to bother (especially if soaked with maple syrup).  If the recipe calls for AP flour, you will probably need to add more liquid to your Prairie Gold flour because the AP, sans bran, isn't as absorbent.

Beat the egg whites until stiff. That'll provide the fluffiness that you're used to in pancakes. I've tried it with 100% buckwheat flour and it works :). Link below.
