Honey skillet cornbread with jalapeno and blueberries

Well with record breaking heat this summer in my new town, I haven't baked much. The blueberries and jalapeno mixed well together. A simple easy, quick recipe.

Heat oven to 400-410F and heat an eight inch cast iron skillet in it.

1/2 C each cornmeal and flour

1/2 tsp baking powder

1/4 tsp baking soda

2 Tbs sugar

1 egg beaten

1/2 cup buttermilk or whole milk soured with vinegar

2 Tbs honey

1 jalapeno minced, I will use 2 next time

3/4 cup of blueberries

Combine dry and wet ingredients separately, then combine, stirring the pepper and blues in well. When the oven is up to temp add 2 Tbs to the hot pan and coat all sides well with butter. The excess butter can be added to the mix.

Pour the batter into the buttered CI skillet and back 25 minutes, turning at the half. Now I say 400-410F as I am adjusting from 400F in a convection oven and find I need either a little more temperature or time in my non-convection oven. Very happy with the results today!

I hadn't thought to combine jalapenos and berries or other fruit, but it makes sense. This looks wonderful - and would definitely be consumed without  leaving leftovers!

It's a great idea to go with a bake that uses a lower temp and shorter time than the big sourdough loaves - it's amazing what a difference it makes in heating up the house, and a fab cornbread like this is a treat, too!

I hope that you're not as smoked out there are we are here in Calgary - and that we all get a break from the heat soon. 

Nice to see you settling in, and getting the oven and time / temp changes figured out for the lower elevation.  Take care, and keep baking happy!

We actually have a blue sky here in Golden this morning. Finally! It has been very smokey with lots of ash depositing on the outdoor furniture and bbq. The corn bread turned out great. I got a similar result with 410 non convection as 400 convection, so I am figuring things our slowly.

This looks fantastic.  Glad to hear from you again.  We have had a weird summer which is just about over.  Was hot as hell the week I took off for vacation to spend with my 86 year old Father-in-law of course :).  The rest of the time it's been cool, hot, cool, hot....

I did some digging and his last post here was June 21/17. I found a post where Floyd had done some digging and some TFL posters in Arizona were unable to contact him. I always enjoyed dab's posts and he always took time to comment on mine. I will miss that. It looks like he and Lucy are gone. Sad.

This recipe looks wonderful and tasty. I always look for such simple recipes so that I taste the variety. My friend suggested me about the guide régime from Cellublue. This guide describes about variety of recipes. I will try the above recipe and I am sure I will love it.
