Hi to all the people who are passionate about the art of bakery!, we are a group of people enthusiastic of homemade bread, who after having suffered the problems involved in kneading bread dough with a stand mixer: The dough be stuck to the walls of bowl or wrapped it cyclically to the kneading hook, which makes it difficult to knead, up to the point that overheat and spoil the dough, until the moment that we had an idea, that we now share with you. We are currently looking for partners to carry out this great project, so we can give a solution to the thousands of users who suffer this problem daily. Can this be used on a KitchenAid stand mixer and can it be used with the mixing hook,also ? Price?

Hi Nancy, thank you for your question.

The Kn-Tool currently are designed for the Kenwood KMIX, although the shape is very similar to the KitchenAid, but unfortunately is not interchangeable, because the dimensions of coupling aren't identical, therefore it's necessary to design the Kn-Tool with the dimensions of coupling to the KitchenAid, which would not be a problem if it were to be manufactured in series.

Regarding the price of the accessory would be around $30.

I always use my KA Pro 600 for the initial mix of every bread that I bake.  I've yet to encounter any problems mentioned.  Those usually happen if the user is mixing more dough than what the capacity of the bowl/mixer are designed for.  I've gone up to 2kg in my mixer without sticking or creeping up the spiral dough hook.  I still rely on stretch and fold to build the dough after the preliminary mixing/kneading.

Hi Alan, thank you for your question.

Indeed, if the dough has the proper hydration and consistency, you'll be able to perform an unfinished kneading, that is to say without achieving a soft, smooth and elastic dough. As you comment, which can be finished by the traditional stretching and folding to form the gluten net, that using the Kn- Tool would shorten the kneading time and provide a soft, smooth and elastic dough, as I mentioned earlier.

Actually the problem is presented in the case of dough with a high hydration ratio such as the French baguette (60% to 75%) and the Italian ciabatta (70% to 80%) or similar, making it necessary to use spatula or scraper to remove the dough of the walls of the bowl in order to continue with the kneading.

Also in the opposite case, when it comes to dough of low hydration (45% to 55%), as in the case of the bread, typical of Andalusia and Castile (Spain), the dough creeping up the spiral dough hook and turnning in the void.

I hope to have expressed correctly the advantages that the Kn-Tool brings.

Nice attachment though most advanced bakers would prefer it fit a Kitchenaid.

One hiccup is the claim that it cleans dough from the side of the bowl. Drizzling a few grams of water down the side of the Kitchenaid bowl while mixing with the dough hook will clean any dough stuck to the bowl and costs nothing.

As you say, we also think that the KitchenAid is the stand mixer preferred by the most advanced home bakers, and therefore we'll contemplate the possibility of starting manufacturing in series the Kn-Tool adapted for the model of KitchenAid best selling.

The solution that you present is practical, by the Kn-Tool you can knead any type of dough, be it hard, soft, enriched (Eggs, sugar, butter, etc.) without having to worry about anything, shortening the time of kneading and obtaining a soft, smooth and elastic dough.

It looks interesting.  How does it do with very enriched doughs like brioche or panettone?  And I'll second the notion that KA compatibility in standard 5 and 6qt sizes is a must.

Hi suave, in my region: Valencia (Spain) is typical the panquemao, a type of pastry whose recipe is the same as brioche, except that butter is replaced with olive oil, or sunflower oil if a softer taste is preferred. This dough has been elaborated using the Kn-Tool, having an optimal result, equivalent to the dough obtained in a Spiral Mixer.

Also comment that using the Kn-Tool you can knead any type of dough, be it hard, soft, enriched (Eggs, sugar, butter, etc.) without having to worry about anything, shortening the time of kneading and obtaining a soft, somooth and elastic dough.

Regarding the annotation of KA compatibility in standard 5 and 6qt sizes is a must, I have previously commented to colleague Wild-Yeast, we'll contemplate the possibility of starting manufacturing the best selling model of KA.
