Got two of the same snaps.  The second was supposed to be this one with the flash - what was pleasing with this bake was the amount of Browning along the ears which doesn't always come out in the photos but after a bit of a change up on oven configuration - starting to see much better development of ears.  In this bake the middle loaf was preshape a bit tighter than the other two and that really shows in the final shape.  Crumb as usual did pretty much what was hoped and is very much like eating a French crueller dougnut.  This was a 12 hour bulk which is not as long as I like and its quite obvious in the final flavor as 18-24 brings out incredible additional dimensions.  Still, pretty pleased with the overall results :)

500 or so to get to this point. I think all the magic happens in the last 99% of perfecting these loaves but getting close !
