My "play dough".. Hemp hearts and golden flax..

Hot out of the oven.. I was planning on a remake of a whole wheat sandwich loaf this weekend but didn't get around to buying the right flower.. having already started a levain build I decided to experiment.. I was inspired by a post Dani3II3 put up recently that included hemp harts, I thought "why not"... it's an adhoc recipe..

125grams levain  build -  5:10:10 Thursday night, then 25:50:50 Friday morning ready to use late friday afternoon
400grams whole wheat 100grams unbleached white - 30 minute autolyse
10 grams course salt flakes ground in pestle to a fine powder (am trying to use up this salt this way)
400grams 85 degree water
50 grams hemp hearts and 50 grams golden flax added after first 30 minute stretch and fold
mixed at 5 pm, 2.5 hours of 30 minute folds, left on counter until 11pm, then shape and 20 minute bench rest, shape into basket - for first time used flour cloth coated with rice flour to line basket, covered and in the fridge
in the oven this morning by 9am at 450 covered for 25 and uncovered for 20

Can't wait to try it tomorrow.. !

Oh, that does look good. How's the crumb? How's the taste? Wonderful on both counts, I bet!

The pictures are posted further down.. light moist crumb, earthy nutty taste from the hemp hearts.. truly pleased with this bake.. !!

I know it is going to taste fantastic too. You will see that the Hemp hearts add a lot of tenderness to the crumb. Glad I was able to inspire you into trying them. I don't see a lot of people using them in their breads.

Probably one of my all time favourite bakes.. light crumb, just the right amount of moisture, killer when toasted, nutty and earthy from the hemp hearts, interesting how the flax seeds just dissolved into the dough.. totally going to make this bread again.. thanks for the inspiration!
