Simple bread..

Simple bread. I need a bread for my breakfast :-)

Hydration 60% you can spread the jam :-)

Little underproof...

Bulk fermentation 5 hours final proof: 4 hours in the fridge after 4 hours at 28°C

Recipe

White flour 10 g protein  1000 g

Water 575 g

Starter ( hydration 100% ) 150 g

Salt 20 g

Good flavor.
