Naan recipe??

I have ths recipe for Indian Naan that is leavened using baking soda. I wonder if there is a way to leaven it with my sourdough starter and skip baking soda. 

  • Plain Flour 250g
  • Oil 1 Tbsp
  • Baking Soda 1/2 tsp
  • Sugar 1 tsp
  • Salt 1/2 tsp
  • Yogurt 1/4 Cup

Its a very simple recipe that yields a very soft chewy naan. Its not bready nor crispy and crusty. Something similar to the picture above.

Any ideas?

I also saw this recipe but like most other recipes online, it uses baking powder /soda. I wonder if its possible to just skip the chemical leavener while natural wild yeast leaven the dough. I also don't see the reason to use milk and yogurt both.

Why you can't skip the baking soda and convert to a sourdough. Take some of the flour and preferment it with water. Adjust the added yoghurt to take into account the added liquid used in your starter. Leave to bulk ferment and then proceed as normal.

Do you specifically wish to not have the baking soda? If you just want another way to use your starter but don't mind baking soda then just add the starter for taste and follow the recipe timings as normal.

10-15 of the flour and water to make a preferment with 10 g of starter but in this case the liquid is the yogurt which makes it a bit strange I have never built a preferment with yogurt and don't know how it would work but you can always add 25 g of flour and water to this recipe and make a preferment that way,  Your recipe would just be 50 g more than it is.

You still may want to keep some baking soda in there to neutalize the acid and cut the sour in the finished naan if folks don't like sour naan.

What changes is how long it is going to take the leaven the dough before you bake it since it is n longer a quick bread.

I got a Naan recipe off of this site.  If you search this site using the key words "Naan" and "Skibum" (a member here) you should find a great recipe for Naan.  I made it and they turned out great.
