Tuscan bread

Tuscan bread ìs one of my favorit bread. Easy and fast to make i love it.

This bread is made with only one proof, no salt and fast rising but unique flavor.

Recipe

Wheat flour 600 g

Water 360 g

Dehydrated yeast ( similar to sourdough ) 40 g

Bulk fermentation 10 minutes

Final proof 90 minutes

I'm loving your breads. Gotta nice crust and very even crumb there. Can you explain a bit more about dehydrated yeast that's similar to sourdough?

P.s. the other day I tried toasted Altamura Bread with Emmenthal cheese. What a combination!

P.P.S wait a second... No Salt!? And the 10 minutes "bulk fermentation" is just the kneading. Old fashioned kneading?

Lievisol. Natural Yeast dried powder to be used in the production of bread. Use recommended dose of 1% to 4% on flour used. There is a technical data sheet but it is in Italian http://molinocolombo.it/wp-content/uploads/2014/05/120103114622_LIEVISOL.pdf

Yes no salt, tuscan bread is only without salt.

Mix and wait 10 minutes to relax the gluten. Dough is made with spiral mixer twelve minutes maximum.
