Roasted garlic scape & asiago levain

It must be spring - I have garlic scapes in the garden! Of course, that inspired this week's test loaf - Roasted garlic scape and Asiago cheese levain. The scapes were chopped and roasted with a little EVOO for about 15 minutes in a covered dish at 400F. I baked demi-loaves (scaled around 400 grams) because this is a specialty bread, not an everyday kind of bread. Each loaf had about 2 Tbsp each of chopped, roasted scapes and shredded cheese. The recipe for the dough was my usual levain dough made with freshly made levain (so not very sour but very tasty!) and a bit of whole grain flour (in this case, whole spelt).

It over-proofed a little so I didn't get quite the oven spring I wanted. That was my fault - I forgot to turn on the oven! It takes a while to pre-heat with the granite stones in there. Oh well, it turned out fine in the end, with a chewy crust and moist, tender crumb. Very fragrant and tasty too!

I might just eat the whole thing... :)

I love cheese and i love bread. So this is a winner in books.

When i finally get to putting cheeses in my bread, I think i will use onion instead of garlic, i find garlic a bit over powering for my taste. But each to his own! I'm sure it was perfect for you.

That's the wonderful thing about garlic scapes - when you roast them they are very mild. Still a nice garlic flavour but milder than using the cloves. Sadly they only last a short period of time in the spring, but maybe I can get some more and freeze them for use later.

But only just a little bit. I say this because when I turned it out onto the peels it didn't have much in the way of structure and started to 'wilt' fairly quickly. One of the loaves was subsequently a bit flattish. Had I put it in the oven 20 to 30 minutes earlier I think the spring would have been amazing!

I can taste the garlic from here!  Great bake.  Cheese and roasted garlic are a perfect combo.

and another wonderful bread. I'm unfamiliar with "garlic scapes", what does this mean/what are they?          marybeth

Hi Marybeth. Garlic scapes are the flower stalks of hardneck garlic. You have to cut them off anyway so the plant puts its energy and nutrition into the garlic bulb for later harvest rather than into blooming, so its nice to be able to use them. They're sort of like garlic-flavoured asparagus! You can roast, steam or stir fry them, or turn them into pesto. Lots of recipes online. They are awesome in the bread!
