Addictive Bread Pudding

Trust me on this -- there may be many ways to make bread pudding, and you may have your favorite -- but this bread pudding is unbelievably delicious and unbelievably simple to make with only a few ingredients. 

The only thing I didn't measure was the cinnamon and the bread.  Here, I used close to an entire boule, just tore it up into chunks.  I used a combination of Saigon and Ceylon cinnamon.

thing you an eat no matter how much whole grain is in the bread or how good it tastes:-)  you just can't stop eating it.  Still, it is nice to look at....... but too much of a carbo, sugar, fat bomb for us diseased ones..... it's like panettone - another real no no......

like Stevia? I really feel for you if you can't eat it at all. I love bread pudding.

so if i made it she would be - 'Where's my dessert?' and I would have to make two different ones.  She doesn't like the smell of baking bread, especially whole grain, rye, and or pumpernickel ones with aromatic seeds - my favorite either so I have to bake when she isn't at home:-)  When she retires it will be murder trying to figure out places for her to go so I can bake.  I predict that very Friday she will be somewhere interesting in the morning.

Diabetes is all about portion size when it comes to all carbs and sugary desserts and food in general.  You can eat as much veggies and meat as you want except for a few, bad sweet ones like carrots, beets and chocolate covered bacon slices....etc.  I have a slice of bread with every meal so the carbs in bread pudding even with Stevia would be problematic.  But as long as keep the weight off i'll be fine as a diabetic can be who makes bread:-)

Your wife doesn't like the smell of baking bread?!?!? Really!??? You don't happen to live in Eugene, Oregon where Ken Forkish got chased out of town for the smell of baking bread , do you? ;-)

Long fermented bread turned into bread pudding is healthy.  I read that somewhere. Just to be safe, cook in cast iron biscuit pan and freeze individual portions. If they don't thaw nicely, toss them. All you are out is a stick of butter, sugar an egg and some cinnamon.

Mmmmm this does look good! I haven't made any in quite awhile. It really is hard to resist, and then I consume more than I should. ( I've been told that it isn't healthy to eat bread for every meal, but that just can't be true...) Anyway, I really like your idea to freeze it in individual portions. I'll try it next time!
