Newly registered lurker introduces himself!

Hi, having been into home baking on and off since I was a kid I recently got a bread baking craze again. Now I have been baking continously since somewhere around october last year with no signs of the craze loosing steam.

I live in about the middle of Sweden. Hard to know what to tell people about myself so I just up a couple of bread pics.

Onion rye from BBA

Improvised recipie about 20% roasted oatmeal

Oatloaf crumb!

Kuret,

Your breads look great!  I agree with Paddyscake, I would like to know more about your Roasted Oatmeal bread.  Give my regards to ABBA.  Love that group.  Here's a link you may enjoy.

Howard, what a lovely treat! Please tell more about the slideshow - is it your work? Great music too and brings back lots of memories of doing aerobics lo these many years ago in San Diego. We danced on concrete, probably why I have fake knees now! Still love the group anyway, A.

Sorry it took more than a week to reply to this but I was abroad and after returning I have been quite occupied both with baking and my education.

However, the roasted oat flour I used is a speciality product I have found from two souces here in Sweden, the flour is made out of soaked whole oats wich are dried and roasted. After the roasting they are stone ground to a fine flour wich looks quite similar to stone ground whole wheat flour.

The recipie I used is a variation on the Basic Sourdough from BBA in wich I used 20% oatflour and upped the hydration to 70% (in the second step not the total dough).

One thing I have found out with this oat flour is that  the dough smells awful, It is hard to explain but it smells strongly of old crackers or comething similar, when baked the horrible smell goes away and the bread tastes wonderful! However my second batch made earlier this week was a flop, I contribute this manly to drier flour and my  addition of 10% rye. Will however make another try at it as soon as my current state of illness goes away!

No, I didn't prepare the Powerpoint presentation.  It was sent to me by a friend and i thought it was really well done.  I also really like ABBA, the Swedish singing group from the '70's and '80's.  Unfortunately, as happens sometimes in life, they broke up as a group.  There was a reunion a few years ago when the musical Mama Mia opened in N.Y. but one of the group, whose name escapes me, lives in Paris and has become somewhat of a recluse.  Regardless...they were great.  It was said at one point ABBA made more money for the Swedish government tha did Volvo.

Sorry to hear about your knees.  Many of us did high impact execises in those days.  I used to do long distance running and I'm paying for it now. Seems there's a movement to low impact exercise.  Good to hear from you.
