Does anyone own or have used Bernard Clayton's "The Breads of France" book? Thoughts, opinions? I was thinking of purchasing the book. Thanks!
Just working through some of BC's French breads and wonder if someone can tell me how much 1 packet of yeast is in oz or gm or teaspoon? In Australia they come in 7gm and 15 gm packets. At present I just guess!
I've found that the 15 gr pkg is 2/14 tsp.
Thats right Ryan but BC just talks about 1 packet - I do not know if I packet is 7gm or 15gm or 2 and a bit teaspoons - the measure he uses is 1 packet and I need to know what its actual weight or volume is? Hope you can help.

Thats what I guessed from usual baking but good to know I can plow on - BCs rye loafs are on for this weekend but also thinking of trying South African Boerbiscuits or rusks.
Allinson the UK flour millers advise in their small cook book that
1 oz(25grm)Fresh yeast =1/2oz(15grm) dried active yeast =1/4oz(7gr sachet or 2.5tsp)Easy bake yeast which is their instant yeast for bread machines
