Rye Test Week 7

The first bread for this week was a Holstein White Rye from Germany.

This bread had a moderate sour taste.  The overall taste of the bread I can't put into words, however it is a very good bread with a tender mouth feel and the crust is crisp. Another favorite...well I should say both breads from this week are favorites.

The second loaf was a Spiced Buttermilk-Beer Bread from Finland.

This one was wonderfully fragrant.  It was so fragrant that the smell permeated through the Cling wrap and filled the house.  Another "aroma therapy." :-)  The taste was sweet and spicy.  The spice blend was perfect. Both the crumb and crust were tender.  This is another all around bread and a great sandwich loaf. BTW...this recipe can be changed to make an Apple Bread.  But I can't tell you how so just keep waiting with bated breathe for Stan's book.

The crumb on the Finland beer bread is just what I look for in a sandwich loaf.

Clazar123 - You and me both (and probably many others) are excited about this book.  I don't know when Stan's book will be out.  I'm sure he has quite a bit of work to do after we finish our testing before it goes to print. I know he'll give us a "heads-up."

David - I agree, that is the perfect crumb for a sandwich. 

Jeano - The buttermilk is a nice addition.  Nice to hear Mr. Jeano liked your buttermilk loaf.  If I'm not mistaken he hasn't been fond of a few of the breads you've baked, even though they were great bakes.  We all have different likes and dislikes when it comes to taste.  It's all good.

DAB - They are both good sandwich breads with different profiles.  Cheese and meat for both.  You are the master in posting pics with all the other goodies to make us all envious of your creations.

DAB I forgot to mention that you have an assistant second class that makes sure everything is spot on with your bakes and pics.   Not all of us are lucky enough to have those assistants.

Distinctively different, but they both look great. Thanks for sharing! Perhaps by next holiday season many of us will have the recipes, too!

Thank you for the kind words. Both are different, not only in looks but in texture, taste "almost opposite ends of the spectrum." Loved both of these breads and will be baking these again soon.  We can only hope that by next holiday season we will all have the recipes.  There have been many wonderful loaves being baked by all...there is more that we haven't seen, so lots of surprises and great recipes for all of us to look forward to.
