First loaf in new house and new Oven:)

Well the move went well and the new Oven is a DELIGHT.

Just out of the Oven. * drooling *

Cooling down * waiting, waiting ... wahhhh *

 

 

Crumb * Kids stole the first slices pffft *

 

 

We have more of this bread with our Green Bean Soup * Like my Mama used to make *  

Just Butter on bread and a bowl of Soup and some Frankfurters, what can be better?

 

250g  mature 50% hydration Starter

625g Strong bread flour

 75g Whole Wheat flour

550g tepid Water

   1Tbsp Caraway Seeds

 25g Salt

   1tbsp Oil

 

Mix flour, Water and oil and Autolyse for 1 hour.

Add Salt.

French kneading in Sets of 5-6 and 5 minutes bench rest in between, did that for 6 times.

Bulk ferment for 12 hours at  room temperature.

Shape and put in banneton which I sprinkled with Corn flour. 

Proof for 2 - 2 1/2 hours 

Preheat your Dutch Oven to 250C.

Tip the dough gently on to a parchment paper that is sprinkled with Semolina and score.

Transport your dough with the parchment paper to your Dutch Oven and put  your dough WITH the parchment paper in to the Dutch Oven.

Bake with the Lid on at 250C for 30 Minutes.

Turn the heat to 200C and bake without the Lid for a further 20 Minutes.

Wow!  I'm not sure if I like your bread or oven more :).  What a great crust and crumb on this one and that oven is making me very jealous!

Congrats on your successful move and good luck.  I hope your puppies are adapting okay.

Thank you Ian, yes, the new Oven is my fav. bit of the entire house. lol

I made Cinamon buns last Night and they came out well too.

Could not make a Picture cose they where gone not much later. tsss

My 9 year old Labrador is doing fine, just Eddie my 4 year old Border Collie does not yet accept that THIS is home lol.

bread is pretty good too.  I see you have upped the hydration to 73% - looks great crust and crumb wise.  Enjoy teh new digs and hopefully the Eddie will come top love it too.  Well done and

Yes, the bread came out quite well.

I wanted to give a bit of a higher hydration a go as I thought OK, new Oven, who knows...

The Eddie is sulking in the Garden. pffft

I love the new Oven, there is so much space now.

I am well impressed with the bake and even so I baked the loaf in the Dutch Oven, it had blistering on the crust:)

Never achieved in the old house and oven.

Now I need to learn how to shape a batard and not just wing it and hope for the best.

Boules I have no problem with.

I'm pretty good at shaping boules, but I have problems shaping my batards. They always seem to end up lopsided.

Same here, that is where that shaped Dutch Oven comes in handy. pheww

lumpy and lopsided - very rustic and country .... ish :-)  It nice when the bread tastes better than it looks....rather than the other way around!

I must say that I love a rustic look, it does not need to be perfect, a bit wonky has it's charme I think:)

For me it is ALWAYAYS  the taste that matters.

I am very happy with the house and the kitchen.

We are also very happy with the Landlord, he and his Wife are wonderful.

More bread to be baked tomorrow.

I was so pleased with the bread.

My fear about the move was that my bread would not bake well in a new Oven, now I am happy, it worked. phewwww

Congratulations on the move and new ove (very jealous) and super congrats on the beautiful bread!  What a success, great crumb and crust - very hungry now!!  Hope Eddie will love the house as much as you do very soon!

we all are just glad that it is over now. phewww

It was hard work.

Eddie was a bit better today.

He is always shy and he does not cope well with changes.

Right now just wants all of us in one room:))

Well he is a Border Collie and we are his * Sheep * lol

Very very pleased with how the bread turned out.

Much better colour, crust and crumb than I had in the old oven.

Yes, it is 2 Ovens.

The big one with lots of settings for Fan oven only for the op bit OR the bottom or both, the normal top and bottom heat or just top of just bottom and also a setting for defrosting... phewww

The small one holds the Grill element, but I have not yet used it.

Dad prefers to grill outside.  My folks worked it out between themselves, each is an expert.   I agree with 'em.  They were born in the '20's.'

Made it to Vancouver, BC and later today catch my flight to Trail with a fresh supply of spices.   Staying in the Travel Lodge near the Airport.  The room has to be the ugliest hotel room I've ever seen and I believe this and the Sandman hotel are competing for the title.  They are  not dog friendly here.  They are charging me an extra $50 CD for one night!  Not a deposit, no partial return.  Hmmm, should walk my dog for that price!  She is the best little traveler, clean, neat, quiet and friendly.  Listens and obeys.  All 8kg.  

I don't even get a set of complementary paper plates to use as dog dishes or extra shampoo or towels. (hey!  I even bring my own drain sieve!)  No guilt (confession here) using the disposable ice bucket for a water dish.  (Deep buckets are great for dogs btw -- less mess.  Bet some of you will now look differently at those ice buckets.   Will leave this one on the floor or in the tub.)   Anyway...  She's curled up next to me on a towel (to be left in the tub somewhere near the non-existant toilet paper holder.)   (and yes, I did check for bed bugs, didn't find any trace of 'em) 

When checking in Dolly was so quiet and calm in her carry bag (the top was open as well) the desk man asked me when the dog would be arriving.  "Will the dog be delivered or coming later?"   I was too tired after the long flight to react smartly.  (Rats!)  Wish I would have said, "You'll know she's here  when you hear her barking, let me know when she's delivered."

I have two slices of yummy walnut rye bread to go with my early morning coffee.  Thinking of Floyd, family and friends while here.  Too short for a social call.  Know I'm thinking about you and sending warm thoughts and good aroma in your direction.  Dolly sends nice dreams to all taste inspectors and helpers.

What breed is your Dog?

She must be a Terrier of some kind when you say * all 8kg of her *:)

That Hotle sounds AWFUL, I would not book there again if I where you.

My husband has to Travel a lot in his job and he said he has seen some of the most disgusting Hotel Rooms , very dirty and just YUCK.

I made a Walnut Sourdough loaf with Wheat flour, Rye Flour and Whole wheat flour, it was sooooo yummy.

I think I put a bit to much Walnut in but one learns from ones mistakes.

Loaf was gone before I knew it. tssss

It is so very hot here in UK where I am on the Isle of Wight, it is insane!

Kids where in the Pool all day yesterday, Border collie and Labrador jumped right in with them.

Just made a basic white today, I had so much to do, will bake a Sourdough later tonight though, I am craving one.

That makes a big difference, at least for me.  Plenty of walnuts in each slice, in fact having a time picking out some bread between them to share with Dolly.   Good guess, she's a Jack Russell Terrier.  And what fun!  

She knew where we were going (been there, did that) and was terribly impatient waiting to board the small plane to Trail.  She jumped into her carrier on her own, sat there and then whimpered the same little noises to communicate she wants to go outside.  "Get a move on!"  she seemed to be saying.  "Why are we just sitting here?"  She settled down when I zipped her inside.  

After landing, we were about a mile down the road when we saw our first sign of bears.  Big loaf in the road.  Lol!  

It's 6°C at 3am.   I'm keeping Baker's hours!   Will have to pick the apple tree out front today, if I want to eat any of them.   Wonder if the bears have been in it.  ???

no,my walnuts where not roasted.

So it is better to roast them first and then put them , once cooled , in the dough?

The Kids * I always say kids * g * The 2 oldest will be 26 & 22 this month, the 3rd one will be 21 next June and the 4th and youngest will be 16 this month. eeeeek

Our first dog Timor was a Jack Russell Terrier, he was not a good beginners dog choice I must admit but we loved him so much.

I would love to Travel around the world.

And watch 'em carefully.   I prefer the oven at about 180° for 10 -15 minutes depending on the water content.  They can burn quickly so avoid spreading them into the corners of the pan.   Parchment is the easiest to clean up.  Once cool many of the skins will fall off so when cool enough, I rub them lightly together and take the tray outside to let the wind blow off the skins.  Don't need to be picky, skins taste good too.   Taste some and make your own decision.   

One day comes soon enough.  :)

The Walnut Country Loaf from Tartine Bread was one of the best tasting breads I've made.  I really just enjoyed slicing the bread and eating it plain. Yummy stuff. I recommend toasting them only because I found it heavenly. However, now that i know you can get great bread not toasting it, I might try that as well to save a step. :)

Think you could bake almonds in a bread too or are they too hard?

Since I did not know one can roast them before baking I just put them in and they tasted wonderful. I think the moisture in the bread and the heat and steam in the dutch oven cooked them perfectly fine.

In 3 years will be our Silver Wedding Anniversary and we want to go on a Cruise:)

I do not want one where I have to wear Elegant clothe though, I am not the type for that kind of stuff, I am happy in Leggins and Jeans. lol

I shall try roasting the walnuts next time I make a loaf like that again.

The photo of the kitchen makes me long for buying a new home, or more specifically, long for the home we were looking at a while back when we were considering moving but decided to wait.

My ideal kitchen will have a nice oven and loads of counter space, with a sliding glass door out to the wood fired mason oven.  Oh, and servants. I want them too.

If the old Landlord would not have wanted to sell his house we would be still there, the aerea was beautiful, we could look over the Sea from all the Windows at the front of the house BUT it was all dated and the Landlord did not really care about repairs.

This house is just perfect and the Landlord is so nice, does not live to far a way and said that we should contact him if ever we needed something done...
