I made these for dinner tonight along with a salad and it was good eating. I used PR CRUST AND CRUMB Pizza Dough II, with some changes. For the flour I used 1/3 all purpose, 1/3 whole wheat I ground and 1/3 King Arthur Italian Style. At the last minute I decided to double the recipe and then realized I didn't have enough poolish so the only thing I had to make up the missing amount was to add about 1/2 cup of my rye starter. It all worked out fine, the rolls were very tasty. I used about 1/4 of a single batch recipe (about one pizza's worth) to make 4 rolls about 6" long. I patted the dough out into rectangles, added thin slices of Asiago cheese, chopped cherry tomatoes and sliced onions, s & p, and about a 5" piece of well cooked and browned Italian Sausage. Wrapped the dough around and sealed. Baked on parchment covered cookie sheet till nice and brown. Oiled tops when they came out of oven. A nice crisp salad and we were happy.

Those are amazing! I've been wanting to make pizza but have been hesitant because I can no longer have dairy products; this looks like the perfect solution. I can make pizza for everyone else, and these (sans cheese) for me.

I just finished looking at ashariels beautiful bread and now this!  We live in the snowy mountains of CO and have cabin fever.  I'll be mail ordering butter and sausage just so I don't have to go out.

I'm glad you liked the rolls, we did too. Give them a try, they're very easy and I'm sure any lean dough or pizza dough would work great. 

edh, the onions and tomatoes would be enough to keep the rolls moist and tasty without cheese.

And Dave, hope you get your mailorder soon. With the weather you've been having you need comfort food. My daughter in Minnesota called today to say they're going to have 45 below wind chill tonight. It's going to be windy in Ohio tonight and cold.  

 

Browndog, don't look at any post with the word sausage in the title and you won't have to be the veterinarian. Anyway, I'm sure Boca must make something that would work as well....hmm, maybe almost as well. :)

Those look delicious! I picked up some chicken/feta cheese/spinach sausages the other day. I know exactly what I'm going to do with them now!

That sounds like a great sausage and I bet it would make a great sandwich. My husband keeps asking me to make them again. Tomorrow is his birthday and I just might. It would be the easiest birthday dinner I ever made. These look so good!  Did the sausage cook any more as the rolls baked? 

It occurs to me these would be good to bake ahead for a picnic also - if anyone actually goes on picnics these days!

The rolls only took about 10 to 15 minutes to cook and the sausage didn't seem to mind. I think they'd make great picnic or party food too. Hope you give them a try.                                                        weavershouse

I probably will, though I'll have to use brats instead. (Avoiding seeds is a real PITA.) Hmmn, a bit of mustard and sauerkraut with swiss cheese? Do you think they would hold OK for awhile after assembly? I wouldn't want to refrigerate before baking as I'm not sure the sausage would heat up by the time the bread was done.

I'm just back from vacation and so had missed these babies when you first posted! I love Italian sausage, in fact the first meal I cooked was penne, Italian sausage with homemade sauce I had frozen from this summer's garden. They look awesome!

Sylvia, I just looked at your post of the baguettes and the daisy bread! I guess you can do a lot with pizza dough, they look delicious.

 

Nomadcruiser53, you might find like we did that when my husband retired we were so busy we couldn't imagine how we got things done while he was working. You'll love it. Happy Baking.
