Some days you're the hydrant.

This one was a dog day. Baguettes with poolish from Hamelman, but a little bit wetter. This baguette stuff is tricky.

baguettes, the crumb came out great too!   Just wish straight dough baguettes didn't stale so fast....

I made them about a week ago. They don't last long, but I found this one in the freezer and thawed it a bit. These are about 70% hydration; I dialed it back from txfarmer's 75% number to work on shaping. The next batch will be a little wetter.

those look terrible...huh..NOT...I don't know what your complaint is. They look fantastic !  After I finish pizza I am moving on to baguette. I have been baking all of our breads since the mid 70's...I still have a lot to learn :)  Don't you love TFL ? c

TFL is such a great resource. 

I'm still a bit inconsistent with baguettes. I know my problem is paying attention to detail. I just have to do that. :)
