I've been having a hard time getting my bread to proof in the cold and am not ready to buy an electric bread proofer.

Good for you! What a beautiful loaf and great picture. Rosemary adds a wonderful scent to any loaf, and asiago, though not my favorite-as I prefer Parmesan, is still good.
What an inspired idea! Thanks for posting this along with the recipe. I'm going to be without an oven for about 6 months and this is a great way to 'bake' bread.
