NY Hard Rolls Disappointment!

I haven't been back to upstate NY in 7 years.  I so, missed the Hard Rolls.  Can't get anything like the Hard Rolls in NY.  Well, went to visit family finally!  Went out to eat in a well know diner.  Couldn't wait to order a cheeseburger with onions on a lucious hard roll.  Disappointment.  Got the same soft mushy roll that seems to have taken over.  I asked the waitress what happened to the hard rolls and her response was we just can't get them anymore.  I never had any problems ever getting a proper hard roll before, so it likes like the New York Hard Roll [in the area I went to} no longer lives!

We went to another diner just to see if they had the great NY Hard Rolls.  No luck!  Maybe you can still get them in NYC and other cities but not in Schenectady.  Anyway, we didn't have time to check out any other places.  I hear Mastrianni's bakery is still open but didn't get a chance to see if they still made them like I was used too.

The hard rolls that I grew up with and ate my whole life in NYS had a crust that would shatter when biting into the roll, and you would get little bits of crumbs all over.  The filling was light & airy.  How I miss that!

Try searching for Norms onion roll, not sure what a "hard roll" is and ive lived in brooklyn my whole life. Try shaping them like he showed in his you tube video...

I have been on a search for a recipe for real hard rolls, for 20 years.  No luck.  We moved to N. Fl. from upstate and the bread here is sad...so sad.   My husband misses hard rolls more than anything else.   If you get back to NY, the Catskill area you can still find them.
