Smaller-sized Gas Deck Ovens with Steam
I'm starting up a small-scale bakery and we're entertaining the idea of going with a gas oven (we don't have access to 3 phase power, and would need to install 400A service which is expensive).
We realize there are not a lot out there in the smaller sizes, but any suggestions would be appreciated. We're in Ontario, so having access to service is important. That said, I saw on another post some folks talking about Unisource's Baby Rembrandt http://www.unisourcefoodequipment.com/pdf/baby_rembrandt_hearthoven.pdf but it didn't seem as though they had actually used one.
Anyone use one before?
Anyone have any other advice?
