Smaller-sized Gas Deck Ovens with Steam

Hi folks,

I'm starting up a small-scale bakery and we're entertaining the idea of going with a gas oven (we don't have access to 3 phase power, and would need to install 400A service which is expensive).

We realize there are not a lot out there in the smaller sizes, but any suggestions would be appreciated. We're in Ontario, so having access to service is important. That said, I saw on another post some folks talking about Unisource's Baby Rembrandt but it didn't seem as though they had actually used one.

Anyone use one before?

Anyone have any other advice?
