Walnut & Cranberry loaf - little oven spring

I tried this recipe and since my first shot, just yielded half recipe. The loaf turned out so tiny and not much oven spring as you could see from the pic.

Nevertheless, the crumb is really short and chewy. And am also not using a DO, just on normal parchment and self created steam.

I wouldn't mind a piece of that for my breakfast!  Despite any lack of oven spring, it looks very, very good.

Yes PaddyL, we had the whole tiny loaf for breakfast soon after it has cooled down just with butter.  It was lovely, and shy it was too tiny a loaf. You should try it someday. Tks for the compliment.

It looks quite nice and crumb is pretty standard for fruit and nut loaf. Maybe cold retard right after shape and you'll Get more spring and an exceptional crust.
