12/6 Bake

I messed around with making Sweet Potato Dinner Rolls the other day.

220 gr.    Sweet Potato pulp from baking the potato first

228 gr.    Warm Milk

58 gr.      Melted Butter, + more for brushing the tops

400 gr.    AP Flour, KA

100  gr.   Sprouted Whole Wheat Flour

14 gr.      Kosher Salt

25 gr.      Light Brown Sugar

8  gr.      Dry Yeast

Method:

Combine warm milk and brown sugar together and sprinkle on yeast and let bloom.

Sft Flours together.

Once yeast has foamed add sweet potato pulp and melted butter to the wet.

Add the flours and salt to the wet and mix until a wet dough is formed, cover and let sit for 20 minutes.

The knead until a nice smooth dough is formed. (you might need a bit more flour)

Let proof for about an hour.

Scale and roll into balls and place on a tray, cover and proof for a 45 minutes to an hour.

Brush with butter and bake at 375F for 35-40 minutes.

I also made a Pear-Almond Chocolate Chunk Cake for the sainted Wife.

Here with some Creme Fraiche on top

Cheers,

Wingnut

that makes everything better.  Your rolls are perfect Wing - just perfect!   The Sprouted WW was a nice touch.  Did it give a sweeter note?  or maybe you couldn't tell with all the SP and brown sugar already in the mix.   If you ask me, sweet potato pie is better than pumpkin any day too!  Don't know why, but Lucy chucks in some orange zest in her SP pie.  Wonder what it would be like in your rolls?  Just mentioning because we are eating the first oranges off the tree today and already Lucy wants to make pie:-)

Happy Baking Wing!

I am not a fan of sweet bread for dinner. So I did not add a lot of extra sugar and the sweet potatoes sweetness was offset by the nuttiness of the Whole Wheat Flour. I would rather put Orange marmalade on a toasted roll personally, but that is just me. If anything I would brush with a little more butter after baking and sprinkle with course salt.

Thanks for the kind words as always DA.

baked tonight and now I know just what to do with them !  I too like the sweet on the outside as a topping. The pics of the cake seem to be missing. Do you have a link to a recipe for that too ? Sounds very yum. Thank you . c

Sorry for the broken link to the pics. I think I fixed it now.

Give a bit to find that formula and I will post it.
